Cheese Casserole

One-Pan Meal Prep Veggie Delight: Cheesy Zucchini, Squash, and Spinach Casserole!

Ingredients:

  • 4 medium zucchinis, diced

  • 4 medium yellow squash, diced

  • 3 medium carrots, sliced

  • 5 cups fresh spinach

  • 5 cups shredded cheese (cheddar, mozzarella, or a mix)

  • 1 tablespoon olive oil

  • 1/2 teaspoon garlic powder

  • Salt and pepper to taste

Instructions

1. Preheat your oven to 375°F (190°C). In a baking dish add the sliced carrots, spinage, zucchini, cheese and squash. Season with a pinch of salt and pepper.

4. Bake in the preheated oven for 25-30 minutes, or until the casserole is set, the cheese is melted and bubbly, and the top is golden brown.

5. Let the casserole rest for a few minutes before serving.
