Chicken, Rice, and Broccoli Dish

Ingredients

  • Chicken Breast: 4 large breasts

  • Rice: 1.5 cups (uncooked)

  • Broccoli: 6 cups (about 2 large heads of broccoli)

  • Bone Broth: 3 cups (chicken or beef bone broth)

  • Olive Oil: 2 tbsp

  • Salt & Pepper: to taste

  • Paprika: 1 tsp (optional)

  • Onion Powder: 1 tsp (optional)

Instructions

  1. Season the chicken breasts with salt, pepper, paprika, and onion powder (or any seasoning of your choice).

  2. Heat 1 tablespoon of olive oil in a large pan over medium heat. Cook the chicken breasts for 6-7 minutes per side, or until fully cooked (165°F internal temperature). Remove from the pan and let it rest for 5 minutes, then slice it into thin strips.

  3. In a medium pot, add the rinsed rice and 3 cups of bone broth (instead of water, for extra flavor and nutrients). Bring to a boil, then lower the heat to a simmer, cover, and cook for about 35-40 minutes until the rice is tender and the liquid is absorbed.

  4. While the rice is cooking, chop the broccoli into florets. (For meal prep option, no need to cook, just place the broccoli in the meal prep glass containers).

This meal prep is high in protein, fiber, and nutrients, and it's perfect for a quick, healthy lunch or dinner!
