Carrot Beef Ricotta Spagetthi

Beefy Carrot Ricotta Delight

Ingredients:

  • 400g spaghetti (or pasta of your choice)

  • 1 package of ground beef or bison

  • 200 g shredded carrots

  • 4 cups ricotta cheese (preferably whole milk ricotta for a creamier texture)

  • 4 tbsp olive oil

  • 4 cloves garlic, minced

  • 1 tsp dried oregano

  • 1tsp basil

  • Salt and pepper, to taste

  • 1 can of tomato paste

  • 1 can of crushed tomatoes

  • 1/2 cup grated Parmesan cheese (optional, for extra flavor)

Instructions:

  1. Boil salted water and cook the spaghetti according to the package instructions.

  2. While the pasta cooks, heat olive oil in a skillet over medium heat. Cook the ground beef and garlic. Add grated carrots and cook for 5 minutes until tender. Season with salt, pepper, and oregano. Mix until creamy.

  3. Add the cooked spaghetti to the skillet and toss to coat with the sauce, adding more pasta water if needed.

  4. Serve the pasta in bowls and garnish with fresh herbs and parmesan.

Perfect for “lazy-meal prep”, filling carrots and cheesy ricotta added to the beef for extra fiber and protein!
