Feta Spinage Wrap

Ingredients

  • 2 cups fresh spinach (washed and chopped)

  • 2 cups crumbled feta cheese

  • 2 eggs

  • 2 cups of mushrooms

  • 1/2 cup diced red onion (optional)

  • 1 small tomato, diced (optional)

  • 1 tablespoon olive oil

  • 1 teaspoon lemon juice (optional)

  • Salt and pepper, to taste

  • 1 large whole wheat or spinach tortilla (Extreme Wellness)

Instructions

  1. In a small pan, heat the olive oil over medium heat. Add the spinach, mushrooms and feta for 1-2 minutes, just until it wilts slightly.

  2. Lay the tortilla flat in another pan. Add the vegetables, feta and egg onto the tortilla. Season with salt and pepper to taste.

  3. Carefully fold in the sides of the tortilla and then roll it up tightly from the bottom, making sure the filling stays inside.

  4. Slice the wrap in half diagonally or enjoy it whole. Serve immediately or wrap it in parchment paper for an easy on-the-go lunch.
