Black Bean Quesadilla

Ingredients

  • 2 cans black beans, drained and rinsed

  • 1 cup shredded cheese (cheddar, Monterey Jack, or a blend)

  • 1/2 cup diced red bell pepper (optional)

  • 1/4 cup diced red onion (optional)

  • 1/2 teaspoon ground cumin

  • 1/2 teaspoon chili powder

  • 1/4 teaspoon garlic powder

  • Salt and pepper, to taste

  • 4 flour tortillas (Extreme Wellness)

  • Olive oil or butter for frying

  • Fresh cilantro (optional, for garnish)

  • Sour cream, salsa, or guacamole (for serving)

Instructions

  1. In a bowl, add the black beans, diced bell pepper and onion, cumin, chili powder, garlic powder, salt, and pepper. Stir to combine. If you like a little heat, you can add a pinch of cayenne pepper or some diced jalapeño.

  2. Heat a skillet over medium heat and lightly grease it with olive oil or butter. Place one tortilla in the skillet and sprinkle a generous amount of cheese on half of the tortilla. Spoon some of the black bean mixture on top of the cheese. Fold the tortilla in half, pressing down gently with a spatula.

  3. Cook for 2-3 minutes on each side, or until the tortilla is golden brown and the cheese is melted inside. You can use a spatula to flip it carefully. Repeat with the remaining tortillas and filling.

  4. Slice the quesadilla into wedges and garnish with fresh cilantro (if desired). Serve with sour cream, salsa, or guacamole on the side.
