Fluffy Bread Rolls

Ingredients:
2 cups gluten-free all-purpose flour
1 tablespoon baking powder
1 teaspoon salt
1 ½ cups warm water
1 tablespoon olive oil (or your choice of oil)
1 tablespoon active dry yeast
Instructions:
In a small bowl, combine the warm water, sugar, and yeast. Stir it gently and let it sit for about 5-10 minutes, or until it becomes frothy.
In a large bowl, mix together the gluten-free flour, baking powder, and salt.
Add the activated yeast mixture, olive oil, and apple cider vinegar to the dry ingredients. Stir until everything is well combined and a dough forms. It should be slightly sticky.
On a lightly floured surface (use gluten-free flour), knead the dough for about 3-4 minutes, just to bring it together. You may need to add a bit more flour if it’s too sticky.
Place the dough a greased bowl, cover it with a clean towel, and let it rise in a warm place for about 1 hour, or until it doubles in size.
Preheat your oven to 375°F (190°C).
Separate the dough into 10 equally sized rolls. Place it on a greased or parchment-lined baking pan.
Bake in the preheated oven for about 30-35 minutes, or until the top is golden brown and the bread sounds hollow when tapped on the bottom.
Let the bread cool completely on a wire rack before slicing.
