Pineapple Pork Tacos

Ingredients:

  • 1 lb pork (pork tenderloin or pork shoulder works best)

  • 1 cup fresh pineapple, diced

  • 1 small onion, chopped

  • 2 cloves garlic, minced

  • 1 tbsp olive oil

  • 1 tsp chili powder

  • 1/2 tsp cumin

  • 1/2 tsp smoked paprika (optional)

  • Salt and pepper to taste

  • Tortillas (Extreme wellness)

  • Fresh cilantro, chopped (for garnish)

  • Lime wedges (for serving)

Instructions:

  1. Cut the pork into small cubes or thin strips. Season with salt, pepper, chili powder, cumin, and smoked paprika.

  2. Heat the olive oil in a skillet over medium-high heat. Add the pork and cook until browned and cooked through (about 6-8 minutes). Remove the pork from the pan and set it aside.

  3. In the same skillet, add the chopped onion and cook until softened (about 2 minutes). Add the garlic and diced pineapple, and cook for an additional 3-4 minutes until the pineapple softens and caramelizes slightly.

  4. Add the cooked pork back into the skillet and toss everything together. Let it cook for another minute to combine the flavors.

  5. Warm the tortillas on a dry skillet or microwave. Spoon the pineapple pork mixture onto the tortillas. Garnish with fresh cilantro and serve with lime wedges.

  • Sliced avocado

  • Sour cream

  • Hot sauce for extra heat
