Halloumi Pasta Salad

Halloumi Heaven: A Pasta Salad Like No Other!

Ingredients:

  • 6 cups pasta (penne or fusilli works great)

  • 200g Halloumi cheese

  • 200 g feta cheese

  • 1 tablespoon olive oil (for frying the halloumi)

  • 3 cups cherry tomatoes, halved

  • 1 cucumber, diced

  • Salad head

  • Fresh basil or parsley (optional, for garnish)

  • Salt and pepper to taste

  • Lemon juice (optional, for extra freshness)

  • Olive oil

Instructions:

  1. Boil a pot of salted water and cook the pasta according to package instructions. Drain and set aside to cool.

  2. While the pasta is cooking, heat a tablespoon of olive oil in a pan over medium heat. Add the halloumi and cook for about 2-3 minutes on each side, until golden brown and crispy. Remove from heat and set aside.

  3. In a large bowl, combine the halved cherry tomatoes, diced cucumber, and salad.

  4. Assemble the salad: Add the cooled pasta to the bowl with the veggies. Pour the oil over the top and toss everything together.

  5. Gently fold in the crispy halloumi.

  6. Garnish with fresh basil or parsley and a squeeze of lemon juice for added freshness. Serve immediately or chill in the fridge for a while before serving.
