Protein Chocolate Muffins

Ingredients:

  • 1 cup oat flour (or whole wheat flour)

  • 1/2 cup protein powder (vanilla or chocolate flavor)

  • 1/4 cup honey or maple syrup

  • 2 large eggs

  • 1/4 cup milk (dairy or non-dairy)

  • 1 teaspoon vanilla extract

  • 1 teaspoon baking powder

  • A pinch of salt

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.

  2. In a large bowl, mix together the flour, protein powder, baking powder, cinnamon, and salt.

  3. In a separate bowl, whisk the eggs, honey, applesauce (or banana), milk, and vanilla extract.

  4. Pour the wet ingredients into the dry ingredients and mix until just combined.

  5. Divide the batter evenly among the muffin tin cups (about 12 muffins).

  6. Bake for 15-18 minutes or until a toothpick inserted into the center comes out clean.

  7. Let cool for a few minutes. Enjoy!
