Berry Avocado Chicken Salad

Ingredients
2 chicken breasts, cooked and sliced
10 strawberries, hulled and sliced
1 avocado, diced
2 tbsp chia seeds
2 cups red cabbage, shredded
2 tomatoes, diced
1 green apple, thinly sliced
2 tbsp olive oil
Salt and pepper to taste
2 cups red cabbage, thinly sliced (same cabbage used for salad)
1/2 cup apple cider vinegar
1/4 cup water
1 tbsp sugar
Instructions:
In a bowl, combine the apple cider vinegar, water, sugar, salt, pepper, mustard seeds, and red pepper flakes (if using). Add the shredded red cabbage and toss it well in the pickling liquid. Make sure the cabbage is fully coated. Let the cabbage sit for at least 30 minutes to pickle. If you have more time, you can refrigerate it for a few hours or overnight for deeper flavor.
Cook the chicken breasts (grilled, pan-seared, or baked) and slice them into thin strips. In a large mixing bowl, combine the sliced chicken, strawberries, avocado, tomatoes, and green apple. Sprinkle the chia seeds over the salad and toss gently to combine. Drizzle the olive oil over the salad and season with salt and pepper to taste.
