Steak with Sweet Potatoes and Vegetables

Ingredients:

  • 2 steaks (your choice: ribeye, sirloin, filet mignon, etc.)

  • 2 medium sweet potatoes and cut into cubes

  • 2 large carrots and sliced

  • 1 small head of broccoli, cut into florets

  • 2 tablespoons olive oil

  • Salt and pepper, to taste

  • 1 teaspoon garlic powder

  • 1 teaspoon smoked paprika (optional)

Instructions:

  1. Preheat the oven to 400°F (200°C). Toss sweet potatoes and carrots with 1 tbsp olive oil, salt, pepper, garlic powder, and smoked paprika. Spread on a baking sheet and roast for 20-25 minutes, flipping halfway. Add broccoli, drizzle with remaining olive oil, season with salt and pepper, and roast for another 10-15 minutes until tender and caramelized.

  2. Season steaks with salt, pepper, and rosemary or thyme. Heat a skillet over medium-high and add 1 tbsp olive oil.

  3. Once the skillet is hot, add the steaks and sear for about 3-4 minutes per side for medium-rare, or cook longer for your desired doneness.

  4. Once the steak is cooked to your liking, remove it from the skillet and let it rest for 5 minutes. Plate the steak alongside the roasted sweet potatoes, carrots, and broccoli.
