Sweet and Sour Chicken with Cucumber and Rice

Ingredients:

  • 4 lb boneless, skinless chicken breasts or thighs, cut into bite-sized cubes

  • 2 tablespoons vegetable oil (for frying)

  • Salt and pepper, to taste

  • 1 cucumber

  • 4 cups rice (basmati or jasmine)

Instructions:

  1. Season the chicken cubes with a pinch of salt and pepper.

  2. Cut the cucumber and add 2 tablespoons of vegetable oil in a large skillet or wok over medium-high heat. Fry the chicken in batches until golden brown and cooked through, about 4-5 minutes per batch.

  3. Add the fried chicken to the skillet with the sweet and sour sauce. Toss to coat the chicken evenly in the sauce and cook for another 2-3 minutes until everything is heated through and well-coated.

  4. Serve the sweet and sour chicken over a bed of freshly cooked rice.
