Poke Bowl

These amazing bowls can be assembled with so many variations. Try tuna, shrimp, salmon or tofu.

Servings: 6

Ingredients:

  • 1 package of lima beans

  • 2 packages of pre-sliced marinated tuna (Wildfork)

  • 2 cucumbers

  • 6 eggs

  • 1 red onion

  • 2 mangos

  • Cilantro

  • 6 cups of rice (basmati or jasmine)

  • Sriracha mayonnaise

  • Sesame seeds

Instructions:

  1. Use a sauce pan with water and bring to boil, add the rice. Turn off the oven and let simmer for 20 minutes.

  2. Use another saucepan and boil the eggs (3-4 minutes).

  3. Prepare the marinated tuna, mix the fish with the marinade.

  4. Cut the vegetables and assemble the bowls.

  5. Sprinkle sesame seeds and drizzle the sriracha mayonnaise.

Might be too much to eat for the entire work week. To be honest, I got pretty tired of the 4th bowl on Thursday, so keep this in mind.

BUT colorful poke bowls for the win! Simple, affordable and healthy!
