Turmeric Chicken Wok

Ingredients:

  • 6 chicken breasts (cooked and shredded or diced)

  • 3 boxes of sliced mushrooms

  • 1 large white or yellow onion

  • 1 tablespoon olive oil

  • Salt, pepper, garlic powder, turmeric, chili powder to taste

  • 1 can of corn

  • 1 can of water sliced chestnuts

  • 1 broccoli crown (can also use frozen but pan will get more liquid)

  • 6 cups of rice (basmati or jasmine)

Instructions:

  1. Cook the rice in a saucepan. Bring water to bowl and simmer for 20 minutes.

  2. Cook the chicken: If the chicken is not pre-cooked, grill, bake, or sauté it until fully cooked, then shred or dice it.

  3. Sauté vegetables, mushrooms, onion, broccoli, corn and chestnuts: In a pan, heat olive oil over medium heat and sauté the until tender (about 10 minutes).

  4. Serve with sweet and sour sauce or other condiment.
