Zucchini Chicken Salad

Fun, colorful and delicious meal prep!

Ingredients:

  • 4 chicken breasts (cooked and shredded or diced)

  • 4 packages of microwavable zucchini pasta

  • 2 boxes of sliced mushrooms

  • 4 large tomatoes

  • 1 tablespoon olive oil

  • Salt & pepper to taste

  • 2 cups of parmesan cheese

  • Handful of basil leaves

    Feta or goat cheese can replace chicken for a vegetarian alternative.

Instructions:

  1. Cook Chicken: If the chicken is not pre-cooked, grill, bake, or sauté it until fully cooked, then shred or dice it.

  2. Sauté Mushrooms: In a pan, heat olive oil over medium heat and sauté the mushrooms until tender (about 5 minutes). Set aside to cool.

  3. Prepare the Zucchini: Put in microwave or cook for about 3 minutes.

  4. Assemble Salad: In a large bowl, combine the chicken, tomatoes, zucchini, sautéed mushrooms, basil and seasoning. Drizzle olive oil on top.

  5. Serve: Garnish with parmesan and serve immediately.
