Zucchini Chicken Salad
Fun, colorful and delicious meal prep!

Ingredients:
4 chicken breasts (cooked and shredded or diced)
4 packages of microwavable zucchini pasta
2 boxes of sliced mushrooms
4 large tomatoes
1 tablespoon olive oil
Salt & pepper to taste
2 cups of parmesan cheese
Handful of basil leaves
Feta or goat cheese can replace chicken for a vegetarian alternative.
Instructions:
Cook Chicken: If the chicken is not pre-cooked, grill, bake, or sauté it until fully cooked, then shred or dice it.
Sauté Mushrooms: In a pan, heat olive oil over medium heat and sauté the mushrooms until tender (about 5 minutes). Set aside to cool.
Prepare the Zucchini: Put in microwave or cook for about 3 minutes.
Assemble Salad: In a large bowl, combine the chicken, tomatoes, zucchini, sautéed mushrooms, basil and seasoning. Drizzle olive oil on top.
Serve: Garnish with parmesan and serve immediately.
