Quinoa and Red Lentil Salad with Black Beans

Ingredients:
1 package of baby spinach
1 package of arugula
2 cucumbers
3 cups quinoa
3 cups red lentils
1 red onion
2 jars of sundried tomatoes
1 bag of pistachio nuts
2 cups of black beans (use low sodium alternative)
Cilantro
Honey
Instructions:
Rinse the quinoa and red lentils separately under cold water until the water runs clear.
Cut the onion, cucumber and cilantro, and add together with the salad (spinach and arugula) into a large pot.
Rinse and dry patch the sun dried tomatoes, and add to the pot.
Add the rinsed quinoa, red lentils to the pot. Bring to a boil, then reduce the heat to low and cover the pot for about 20 minutes.
Taste and season with salt and pepper. Garnish with fresh cilantro, pistachios and drizzled honey.
