Beet Salad with Walnuts and Goat Cheese

Servings: 2

Ingredients:

  • 1 package of baby spinage

  • 1 package of arugula

  • 4 large beets (I always use pre-cooked ones for convenience)

  • 1 handful of walnuts

  • 2-4 tablespoons of olive oil

  • 200 g goat cheese (You can also use feta cheese for this recipe).

Instructions:

  1. Place the baby spinage and arugula in a bowl.

  2. Cut the beets and goat cheese. Add into the salad.

  3. Sprinkle on the walnuts and season with salt, pepper and drizzled olive oil.

Serve and enjoy!
